Many Branson restaurants don't accept reservations or only accept them for large groups.  If you are traveling in a group, it would be wise to make a reservation or else you may end up having to change your dining plans at the last moment.  Depending on the size of your group, you may also want to be sure the restaurant has the capacity to accommodate you.

You should also keep in mind that numerous bus tours arrive in Branson daily, and depending on the time of year, you can expect a lengthy wait at the more popular Branson dining establishments.  During the busy season (generally mid-May through mid-August) you may want to dine at untraditional times to avoid crowds and long waiting times.
